Milk powders are widely used in beverage and dairy applications because they provide concentrated dairy components in a dry ingredient. However, Full Cream and Skim Milk Powder are not interchangeable in every formulation.

When might Full Cream Milk Powder be considered?

Full Cream Milk Powder retains more milk fat. It may be relevant when the formulation needs a greater milk-fat contribution and a richer dairy character. Final mouthfeel and flavour still depend on the full recipe, including water, sugars, flavours, other fat sources, stabilisers and processing.

When might Skim Milk Powder be considered?

Skim Milk Powder contains very little fat and mainly provides nonfat milk solids such as proteins, lactose and minerals. Different heat treatments can influence protein functionality, so the generic description “SMP” is not enough to establish suitability for every beverage.

Processing still matters

Solubility, mixing order, shear, temperature and any homogenisation or thermal process can affect results. When changing supplier or grade, evaluate the ingredient under your own formulation and process conditions before a major scale-up.
