Start with the function of the premix

When Full Cream Milk Powder may fit
Whole/Full Cream Milk Powder may suit a premix that needs milkfat and a richer dairy profile. It is commonly used in bakery, confectionery, dairy products and prepared mixes.
When Skim Milk Powder may fit
Skim Milk Powder may suit formulations requiring dairy solids with lower fat contribution. SMP is used in prepared mixes, bakery, dairy, beverages and confectionery. Heat class can affect functionality, so check the specification where relevant.
Do not choose on price alone
Replacing Full Cream with Skim, or the reverse, can change total fat, flavour, texture and solids balance. Commercial formulations should be trialled before routine substitution.
